**Just a note: Salt & Fresh Ground Pepper are a given. Remember to always taste as you go!
First Course is made up of three dishes: Two Types of Bruschettas and Spicy Mozzarella. These are such easy appetizers. Bruschetta by the way is just grilled or baked bread rubbed with olive oil. The first is made with tomatoes, red onion, basil, & balsamic vinegar. The other is my favorite way made with white beans, fresh rosemary, olives, and olive oil.
These two should take no more than 10 minutes to prepare. Serve them in two separate bowls with slices of oven toasted french or italian bread and there you have it. **for a an extra twist, spread goat cheese on the bread.
I'm serving the Spicy Mozzarella along with the bruschetta. Take some fresh mozzarella (fresh works best!) and slice or cube it, however you like. Drizzle with a few tablespoons of olive oil, throw in some red pepper flakes --->up to you how spicy you want it, & fresh oregano. That's it.
Dinner is just as easy, although it sounds fancy. Chicken Scallopini (flattened) in Hazelnut Cream Sauce.
Dessert is even more simple: Minted White Chocolate Ganache (fancy way of saying melted chocolate and whipping cream) over Bananas & Berries.
