Here' s a recipe for you that really takes 10 minutes to make. (add some time if you're making rice or pasta)
Cilantro-Lime Shrimp
Juice of 1 lime
1 bunch of cilantro (about 1/2 cup chopped)
Salt and Pepper
1/2 lb. fresh uncooked shrimp (about 15)
Rinse the cilantro thoroughly, pat dry, and chop up. In a bowl, add salt and pepper to the shrimp and the juice of 1 lime. Add the cilantro to this. Let it sit for a few minutes. (not too long--citrus juices and anything acidic cooks seafood) Heat a medium pan with 1 tablespoon of olive oil, or better yet, spritz the pan using an olive oil sprayer. Add the shrimp to the hot pan and cook for three minutes or until the shrimp is a pale pink. ALL DONE!
